
This is the recipe from Carlucci, the restaurant mentioned in Craig Miyamoto’s Personal Rave page. It was submitted to a newsgroup Kimberly Mendoza, who exported it from MasterCook. The recipe is by Vince Tyler of Carlucci. Preparation time is about 30 minutes, and it serves 4. (Suggested wine: Moscato d'Asti)
Carol Whittom couldn't find mascarpone, so she adapted the recipe.
Ingredients
- SUGAR, 3 tablespoons + 2 tablespoons
- EGG YOLKS, 2
- CREAM CHEESE, 2 ounces
- MASCARPONE, 5-3/8 ounces
- MARSALA, 3 teaspoons + 1 ounce
- HEAVY WHIPPING CREAM, 7 ounces
- ESPRESSO OR STRONG COFFEE, 2 cups
- WARM WATER, 1/2 cup
- LADYFINGERS, 24 French-style
- POWDERED SWEETENED COCOA MIX, 3 tablespoons
Directions
Prepare Cream Mixture
- In an electric mixer, whip sugar and egg yolks on high speed until pale yellow and thick.
- With mixer on medium speed, add cream cheese and whip until smooth.
- Add mascarpone and Marsala.
- Mix until incorporated.
- Whip the cream and fold into the mixture.
- Refrigerate.
Prepare Espresso Mixture
- Combine espresso, additional Marsala, sugar, and warm water.
Assembly
- Dip ladyfingers in espresso mixture.
- Place one layer of dipped ladyfingers on bottom of serving platter.
- Top with one layer of cream mixture.
- Add another layer of dipped ladyfingers
- Top with a second layer of cream mixture.
- Sift cocoa over top.

Carol writes: "I tried your Tiramisu recipe from Carlucci's Restaurant. It was wonderful. However, finding mascarpone in Idaho can sometimes be a challenge, so I did a variation on that recipe. I thought it was just as good, and I am much more likely to have these ingredients on hand. I sold one of these at an auction, and it brought $60, not bad for a first-time entry!"

- MARSALA, 2 Tbsp. + 2 Tbsp.
- SOUR CREAM, 3 Tbsp.
- HALF & HALF, 2 Tbsp.
- HEAVY WHIPPING CREAM, 7 oz. whipped
- STRONG COFFEE, 1 cup
- SUGAR, 2 Tbsp.
- LADY FINGERS, 24
- POWDERED, SWEETENED COCOA MIX, 3 Tbsp.
Directions
- In an electric mixer, whip sugar and egg yolks on high speed until pale yellow and thick.
- With mixer on medium, add cream cheese and whip until smooth.
- Add 2 Tbsp. Marsala, sour cream and half & half.
- Mix until smooth.
- Whip the cream, fold in, and refrigerate.
- Combine coffee, 2 Tbsp. Marsala, and sugar.
- Place ladyfingers in the bottom of a 8x8 pan.
- Generously drizzle coffee mixture over ladyfingers.
- Top with 1/2 of the cream mixture.
- Add another layer of ladyfingers.
- Generously drizzle coffee mixture over ladyfingers.
- Top with remaining cream mixture.
- Sift cocoa over top.
