Carlucci's Tiramisu


This is the recipe from Carlucci, the restaurant mentioned in Craig Miyamoto’s Personal Rave page. It was submitted to a newsgroup Kimberly Mendoza, who exported it from MasterCook. The recipe is by Vince Tyler of Carlucci. Preparation time is about 30 minutes, and it serves 4. (Suggested wine: Moscato d'Asti)

Carol Whittom couldn't find mascarpone, so she adapted the recipe.

Prepare Cream Mixture
  1. In an electric mixer, whip sugar and egg yolks on high speed until pale yellow and thick.
  2. With mixer on medium speed, add cream cheese and whip until smooth.
  3. Add mascarpone and Marsala.
  4. Mix until incorporated.
  5. Whip the cream and fold into the mixture.
  6. Refrigerate.
Prepare Espresso Mixture
  1. Combine espresso, additional Marsala, sugar, and warm water.
Assembly
  1. Dip ladyfingers in espresso mixture.
  2. Place one layer of dipped ladyfingers on bottom of serving platter.
  3. Top with one layer of cream mixture.
  4. Add another layer of dipped ladyfingers
  5. Top with a second layer of cream mixture.
  6. Sift cocoa over top.

Carol Whittom's Adaptation

Carol writes: "I tried your Tiramisu recipe from Carlucci's Restaurant. It was wonderful. However, finding mascarpone in Idaho can sometimes be a challenge, so I did a variation on that recipe. I thought it was just as good, and I am much more likely to have these ingredients on hand. I sold one of these at an auction, and it brought $60, not bad for a first-time entry!"

  1. In an electric mixer, whip sugar and egg yolks on high speed until pale yellow and thick.
  2. With mixer on medium, add cream cheese and whip until smooth.
  3. Add 2 Tbsp. Marsala, sour cream and half & half.
  4. Mix until smooth.
  5. Whip the cream, fold in, and refrigerate.
  6. Combine coffee, 2 Tbsp. Marsala, and sugar.
  7. Place ladyfingers in the bottom of a 8x8 pan.
  8. Generously drizzle coffee mixture over ladyfingers.
  9. Top with 1/2 of the cream mixture.
  10. Add another layer of ladyfingers.
  11. Generously drizzle coffee mixture over ladyfingers.
  12. Top with remaining cream mixture.
  13. Sift cocoa over top.
