William Bohannon’s Sugar-Free Tiramisu Recipe

This sugar-free recipe was created by William for his diabetic aunt, and even includes soft and tender sugar-free ladyfingers. The recipe also includes Marsala wine, which some diabetics can have. If it is not in their diet, then William suggests substituting an equal amount of raisin extract. He wrote: “Many diabetics will appreciate finally being able to share the delicious flavor of the Tiramisu.” Thank you, William! Serves 5.
  • [b]Sugar-Free Almond Ladyfingers[/b]
  • SLICED ALMONDS, 3/4 cup
  • ALL-PURPOSE FLOUR, 4 tablespoons
  • EGG YOLKS, 3, whisked with Equal Spoonful sweetener (3 tablespoons)
  • EGG WHITES, 3, Beaten into a medium meringue
  • MELTED BUTTER (optional)
  • ESPRESSO (or sugar-free hot cocoa for dipping

  • Sugar-Free Mascarpone Cream Mousse[/b]
  • MASCARPONE, 8 ounces
  • EGG YOLKS, 3
  • EGG WHITES, 3, whipped into meringue with cream of tartar and a little equal Spoonful sweetener.
  • FRESH WHIPPING CREAM ,1/2 pint whipped with a little sweetener (not Cool Whip)
  • MARSALA WINE, 3 tablespoons
  1. [b]Sugar-Free Almond Ladyfingers[/b]
  2. Preheat oven to 400F. Line sheet pan with waxed paper.
  3. Process almonds in blender or processor until ground.
  4. Mix in flour.
  5. Mix yolks into 1/3 of meringue.
  6. Sprinkle in 1/3 of the flour/almonds. Fold gently.
  7. Fold in the rest of the meringue and flour/almonds in two more equal batches.
  8. Spread the batter ½ inch thick across the waxed paper or pipe with pastry bag and large round tip into ladyfingers.
  9. Sprinkle with Equal Spoonful sweetener.
  10. Bake 8-10 min. The sweetener on top produces some smoke so don’t be alarmed, your ladyfingers aren’t burned.
  11. Brush sheet cake or ladyfingers with melted butter if desired.
  12. Slice sheet cake into ladyfinger strips.

  14. Sugar-Free Mascarpone Cream Mousse[/b]
  15. Boil 1/2 cup chopped raisins in 1/2 cup water. Reduce by half. Strain.
  16. Whisk egg yolks with Equal Spoonful sweetener.
  17. Whisk egg yolks into mascarpone.
  18. Add marsala or raisin extract.
  19. Fold in 2/3 of meringue. Set aside.
  20. Dip ladyfingers or strips into espresso or sugar free hot cocoa prepared. Line serving dish as desired.
  21. Pour/spread mascarpone cream mousse into lined dish.
  22. Fold remaining meringue into whipped cream.
  23. Spread on top of mascarpone cream mousse.
  24. Sprinkle with cinnamon and cocoa powders.
  25. Using two chopsticks or long round objects (pens, skewers, wooden spoon handles, etc.), make small spiral swirls into dusted surface starting from the outside and go all the way around, then move in closer and go around again until you reach the center.
  26. Refrigerate 3 hours.
